#2 Still Head producing high purity spirit. Traditional recipes & methods don't mean old technology. Masters past used the best equipment they could acquire, and so do we. Technology has changed, and knowledge progressed. The very latest equipment with time honoured processes now happily coexist.
New barrels ready to fill. With 70% of the flavour in some aged spirits coming from the barrel, barrel selection and care are key to producing superior products. Some things just can't be left to chance.
Our process starts with ingredients we source as close to the distillery as possible. We then "mash in" and produce our own alcohol, making us one of only 5% of distilleries in Australia that do this. Producing our own alcohol means we're in control of quality from the very first step. We produce a range of bases that all have their own specific qualities, allowing us to fine-tune each recipe. It's what we discard that truly makes the difference. There is no harsh burn, and the day after need not be feared any longer. Keeping only one-third of the alcohol we produce is the key: just the very centre of the 'hearts' cut, the best of the best. From there, we go on to macerate fresh botanicals and, using a triple distillation process, produce a Gin we're proud of. For our Liqueurs, we mix fresh local produce with herbs and spices and some specialty ingredients from other trusted small business partners to produce a range that is second to none. Truly local.
